On the Menu: Lime Edamame Dip

Whether you are hosting an Oscar party or attending one, we have another delicious appetizer for you to whip up! Susan of Peas and Love and I were pleasantly surprised by the overwhelming response to the Superbowl dip we shared with you, so we thought we’d break out another top secret dip. This one definitely packs the punch in color and in flavor.

Lime Edamame Dip



12 oz. cooked Edamame 1/2 an Avocado 1 big clove of Garlic 1 Shallot 3 Tbsp Olive Oil Juice of 1 Lime 1/4 cup mix of Parsley and Cilantro Salt to taste



Bring all ingredients together and pulse for 2-3 minutes until smooth, and parsley is evenly mixed in. Blend longer and add drops of water if necessary to achieve desired consistency. Serve with endives or crackers. Enjoy!
